Hot and Sour Chicken Soup

Ingredients
  • 2 cups - vegetable/ chicken stock
  • 1 - carrot (cut into fine strips)


  • 1½ tsp - chilli sauce
  • 1 to 2 - finely chopped spring onions
  • 3 to 4 tbsp - vinegar
  • 2 tsp - soya sauce
  • 1 - egg beaten
  • 11/2 tbsp - cornflour (mixed with little water)
  • salt to taste
  • 6 to 8 - french beans (cut into fine strips)
  • 1 - capsicum
  • 4 to 5 - small florets cauliflower
  • 1 small piece - cabbage ( finely chopped)
  • 1½ cup - boiled and shredded chicken
  • black mushrooms sliced into pieces
  • 1½ tsp - pepper
Methods
  1. Boil the carrots, French beans and cauliflower and keep aside.
  2. Keep the stock to boil.
  3. Add spring onions, salt, pepper, mushrooms. Boil for 2 to 3 minutes.
  4. Add the carrots, beans, capsicum, cauliflower, cabbage, chicken pieces, vinegar, soya sauce and chilli sauce. Give it a boil.
  5. Add the corn flour mixture to the boiled ingredients.
  6. When the soup thickens gradually pour egg stirring over it.
  7. Remove and serve hot with chilli sauce and vinegar.
